How to Choose the Perfect Foie Gras for Your Table?

Whole Foie Gras refers to the whole lobe of 100% foie gras without fillers of any kind. May be purchased fresh or flash frozen vacuum packed. This foie gras is ideal for those of us who have their own favorite foie gras recipes.  Block of Foie Gras is a blend of recomposed foie gras containing 100% foie gras with a dash of salt, wine and spices. This product comes fully cooked and does not require refrigeration prior to opening.  Mi-cuit or Semi-cooked Foie Gras is made of one or two pieces of liver which has been mixed with wine and spices and preserved in a vacuum sealed jar. Unlike fully cooked foie gras products, mi-cuit foie gras requires refrigeration and has a shelf-life of up to one year from date of production.

Mousse of Foie Gras is a blend of fresh foie gras prepared with pork and gelatin which contribute to its wonderful silky smooth, easy to spread texture. Foie Gras Mousse is an ideal foie gras product for entertaining larger groups in style without breaking the bank.
